I would have thought that Competition Car Insurance would be able to sort you out a one-off insurance cover. They do enough of it for one day trackdays and sprints.
I spoke to them last time this happened and they couldn't help unfortunately. I may have found a way around it but it would be useful to get a solution I can employ on a more regular basis.
