DVD writers / CD writers ?

Could someone tell me what (+/-) relates to concerning DVD writers. eg: DVD-R, DVD+R,
DVD-RW, DVD+RW.

When I tried burning a music CD using Nero(?) I got a clicking noise in the background, any ideas if I did something wrong or its the writer, it's a fairly old one in a PC that was given to me, I have saved word documents using it and they worked fine.
