On the subject of names which end in the letter s, I remember a chap whose surname was Masters. Cue a colleague spelling it Master's at every opportunity. Freddie Sheers should never have his name manipulated to include an apostrophe. The apostrophe would always come after the second s.

And AFAIK if Sheers is a name you can use either Sheers' or Sheers's as the possessive. In any case there is no change to Sheers if there is more than one gallery.

No - children is already plural. There is no need to add an "s" to it except following an apostrophe to indicate possession. The plurality of the owner is independent of the plurality of the owned.Children's books = many children, many books
Child's books = one child, many books
Children's book = many children, one book
Child's book = one child, one book
Childrens' books = nonsense.
