If I'm being critical it needed a little more crisping on the bottom, either with a nice thick tray or a pizza stone. But overall I'm very happy.

Juicy Lucy burgers on the bbq today.
Two quarter pounders (shop bought caramelised onion) burgers, flattened out and smooshed together around a nice big slice of mozarella. On a toasted brioche bun (that fell apart a bit with the meat juices)
One of my better efforts to date.

Yep that's the stuff, they do loads of great rubs. For the kebabs I normally go 3.5% weight rub to meat then wing it with yoghurt and lemon juice.

It was my wife's birthday last week, she requested crab which wasn't available so I did her pan fried fillets of Dover Sole with a shallot, prawn, herb and butter sauce, fresh English asparagus and a special treat of oven chips.

And why did you give here all the small chips no one wants, she only got 2 decent ones and the rest seem odds and ends. Did you eat all the long and thick ones yourself hehe

Harsh but Fair.

I would have loved to have given my wife the meal she deserved by cutting and frying her some proper chips but we don't have potatoes in the house, we're on this Keto/Low Carb diet and they're unfortunately forbidden.

I got away with the oven chips because there just wasn't enough time to do anything else, they were all that was left in the packet and the first chips we've had since early January.

I'd like to say that I got all the best ones as that's the way it normally is but that's a picture of my plate, she did actually get all the long and thick ones and they were McCains Gourmet Chips, nothing but the best for her!!

Another curry tonight.

This one is chicken rezala, a mild but flavoursome Bangladeshi dish, with poppy seed raita, khichdi (spiced basmati rice and red lentils) and a variation of panch phoran veg, using what I had available in the fridge.

Lamb Kofta

Minced lamb, fresh mint, fresh parsley, coriander powder, cumin powder, cayenne pepper, smoked paprika, grated garlic clove, green chili, salt & pepper.

Served with a cooling yoghurt dip made with garlic, mint leaves, lemon zest & cucumber. Seasoned with salt & cumin powder.

Bloody good job.

Put your oven rack lower down, bottom cooks quicker, top cooks slower, simples beer

Leave the oven on max for one hour minimum before cooking and used dried basil when making your pasata instead of burning fresh leaves on top. Even places like Lucali's get that wrong.

I'm a fierce pizza critic but only 2 pizzas in you're already doing well.

Also with a Tirokafteri dip and thin cut wedges.

Had a hankering for a doner, had to make it at home. Made the pitas too.

The meat was spot on, just like the real thing!
