Personalised reg and VED question.

I've bought a used vehicle and am planning on getting it trailered to a garage where it's going to have some work done. Whilst it's in the care of the repairing garage and bodyshop (will be around two weeks), I'm planning on having it SORN. Insurance wise, my present policy for the car I am currently riving runs out on 17th December. Due to being able to get a cheaper price as a new customer, I'm going to run the policy until it expires and start a new policy for the new car on the 18th December and start driving it then.
In the meantime, I want to send off the current V5C together with my certificate of entitlement for a reg which I have bought directly from the DVLA. However, the certificate of entitlement asks when the tax on the vehicle runs out. I therefore presume that the car needs to be taxed and they won't apply the new reg to a SORN vehicle. Is this right?
Also, if I decide to tax the vehicle, under the continuous insurance rules, it also needs to be insured doesn't it?
