See Section 4 Item C on the Guidance Notes which accompany Form V317. Under no circumstance give the V5C/2 (new keeper slip) to the buyer. If you do, you run a very real risk of losing the cherished registration. You need to send the whole of the current V5C to Swansea and wait until you receive the replacement. Then give the buyer the V5C/2 slip from that. Unfortunately this process will take time as all the local DVLA offices that used to be able to deal with these applications no longer exist. A right PITA.

I wouldn't be handing the car over until the registration is off and all the paperwork done.

As this same question seems to get asked almost every week now we either need:
a) a sticky on the subject, or
b) some means of searching the site...oh hang on...

You either hold back the car and lose a buyer, or offer to pay all their costs towards the cost of retaining the plate.
Could you mention the plate on the receipt?

Dont on any account part with the V5C and preferably the vehicle until the private reg is on retention.

+1 on don't sell until the v5c is back in your possession with correct reg number showing. If you sell the car, you no longer own it so you no longer have entitlement to the plate, irrespective of whether the person buying it says they'll be nice and play along! Even if you retain the v5c they can apply for a new one and the same risk of loosing the plate applies.

If it's for spares/repairs will the buyer care if he has to wait a week to collect, or is it unroadworthy with an expired MOT?

If you stick it in 1st class post they generally turn them around in a week or less
