County Court Claim - Which Address To Serve Claim ?

I want to initiate County Court proceedings against a tradesman who did some poor quality work for me. I'm leaving the details of the claim deliberately vague and don't really want to discuss it here for obvious reasons. The amount of the claim will be a few hundred pounds and the claim meets the criteria for being dealt with by the Small Claims Track.
The individual concerned is a sole trader.
I'm looking for help on how to make sure that he doesn't claim to have not received the court papers and subsequently have any CCJ the court may make against him set aside.
I know where this person lives, but he lives in a house owned by his girlfiend and is not on the electoral roll at this address and I assume no utilities, council tax etc at this address have his name on them. Yell.com and other directories how this as the address he trades from. 192.com doesn't tell me anything useful about him but gives plenty about the other people who live at this address.
I also know of a company who he works as a subcontractor for the vast majority of the work he does - but he is not an employee or director of this company. The work I have a problem with was done directly for me and doesn't involve this company.
If I give the address where he lives when I make the claim - can I be sure that the court will consider the papers and any summons etc to have been properly served ?
I'm aware that even if I secure a CCJ against him - my chances of actually recovering any money from someone who doesn't own a home and will claim not to own any assets apart from a van and tools are slim - but I don't really care.
