I wish to ask for an adjournment of a case at the County Court at Central London Royal Courts of Justice by E-Mail and I don't really know where to start.
Its HMRC V Me, HMRC have a bankruptcy petition against me but I have spoken to them and they have said that they would not oppose an 8 week adjournment to allow me to raise the cash, I would be grateful if someone could point me in the right direction. Oh and yes I know that I am a nob for allowing it to get this far.

I think you fill in Form N244 and send it off to HMCTS.

You'll need a Consent Order adjourning the hearing of the petition to the first available date after 8 weeks. Both you and HMRC will need to sign the Consent Order and you then need to lodge it with the Court. There is a fee of £100 payable for the lodging and sealing of the Order.

Happy to draft you something if you PM me a copy of the petition and details of the date of the hearing.

This is only necessary if HMRC won't consent to the adjournment but from what you say in your post, they won't object so a Consent Order is the cheaper option.

Consent Order with a suitable grovelling letter to the Court. Remember, even if both parties consent, you still need the Court's permission to adjourn a hearing.
