Its to aid identification of particular units from the air.
A triangle on the roof denotes a vehicle carrying police dogs
A circle on the roof denotes a traffic car.
An asterisk on the roof denotes a firearms car.
A square denotes a vehicle used for public order purposes (aka 'meatwagon' or riot vans...)
Often the number next to these symbols will be the Home Office/PNC number code for a particular force as well - https://en.wikipedia.org/wiki/Home_Office_radio
E.g. a markedWest Mids Police traffic car will have a black circle and '20' on the front part of the roof.

Some forces will dual purpose vehicles (utilising firearms trained officers to do traffic work in between their firearms jobs) so you might see a marked X5 or similar with a firearms 'asterisk' on the roof being used for traffic duties on a motorway. Equally, vehicles used for training or loaned out to regular units may be used for duties not necessarily matching the roof symbols.
