I'll be on the M25 from the M3 to the M1. Am I right in thinking -
No average speed camera system on that stretch?
Gantries have cameras on both sides of the road - meaning that if there's none on the other side there's none on mine?
If it's very busy there's no detour worth taking?

Don't worry, you'll rarely be going anywhere near fast enough on that stretch. It's usually stop start during waking hours.

None once you leave the M3

Nope
And they enforce the 70 limit

Many of the gantry boxes have been superceeded by HADECs 3, so I wouldn’t use the presence of box’s as a guide.

Set cruise/limiter and chill, cameras all over the place along there, dont be a gantry wker.

All the HADECS2 have gone, just HADECS3 now - the yellow boxes at the side preceded by pole with the 3 cameras on to record any speed limit displayed.

They enforce when there is and when there isn't a reduced speed limit displayed. You can't tell what they are set to. I set my cruise at 77 according to the sat nav and have not been flashed (and 10%+1 if a reduced limit). I have seen people going faster than me flashed and people going faster than me not flashed.

M3 to M1?

Best advice is to purchase a firearm and use it on yourself. Perhaps short term pain but it will save you many agonising hours. *

Dignitas for the road, if you will.

Just drive at that speed limit (not that you'll be able to get anywhere near it in commuting hours on that stretch). It's not worth the stress and risk of speeding just to save a few minutes.

Also use lane 1 as much as you can if you want to make any decent progress. This will be a soul destroying commute for you that section is awfull.

But look out for n/s lane drops at some junctions. What I call 'scrape-off' lanes.
