As title, my wife and I drove south to where I am currently working. We travelled in separate vehicles on the same day, Jan 3rd. Notification that my wife has been recorded at 80mph on the A1 has come through, and she doesn't dispute it. The person we asked to open the mail has failed to open this letter, but has opened the reminder which gives my wife 7 days to respond.

The relevant dept is open on Monday and there is a telephone number. By the time the form is posted down to us and then back to this dept, time will be tight. Has anyone been in this situation, and are they likely to allow a little leeway in the circumstances? We may not need it, but better not to assume. I dare say we won't be the first to ask.

There is a defence to a failing to furnish allegation if you proved that the information was provided as soon as practicably possible after the original 28 days.

That said, you clearly don't want matters to escalate to that, so you could phone them on Monday, let them know what's been happening and that the completed form will be returned within the next 48 hours.

Has the person who opened the letter photographed it and sent it over to you
At least you then have something in front of you when you speak to someone on Monday

Yes, I have a pic on my phone of the reminder, and the person opening the mail for us is going to send everything that isn't obviously junk mail through to us in the post.
