How do you insure it if you don’t have an address?

If you have any contents insurance on your rented flat, that might be an issue if you're away for more than 30 days.

Also, I'm a landlord - my building insurance assumes a tenant is there. If it was empty, it's a completely different policy so I - and my insurers - would have a big issue if my tenants disappeared for months even if they continued to pay the rent.

(In fact, from memory I think it's a term in my tenancy agreement that they're not allowed to leave the house empty for more than 30 days)

Any family members you could register the van at? Or friends who could pop by and check your mail (and home) from time to time?

The van life ppl usually have them registered to their parents, friends or siblings.

I belive that DVLA will accept a PO Box as an address. People who live aboard canal boats do this.

The difficulty you may have is insuring your van. Will you have trouble providing a PO Box as an address?

You may need to check your car insurance cover (if you haven't already) - i'm fairly sure mine says no more than 30 consecutives days away from home, up to a total of 90 in the policy year.

Also, if venturing outside EU countries, make sure it still covers you - I almost got tripped up by just venturing into Switzerland.

The charity shelter have a service of receiving mail for homeless people. This includes car dwellers and sofa surfers. If you gave up your rental you would qualify for it. They also help with bank accounts and benefits etc.

I thought this too. But they must be insured or ANPR would flag up their cars and they could be confiscated.

Heard good things about http://www.boatmail.co.uk/

Currently on a year long trip in my camper but I have my parents popping into check on my house every week or so.

Tolls / vignettes for Europe were setup before I left and can be paid online. From what I’ve read, now we’ve left the EU the chances of actually receiving fines from aboard are very slim (certainly didn’t hear anything about the cameras I set off in Germany).
