What is the correct oil pressure for a k series.
Mine is about 3.5 bar at anything above 3500 RPM and just touching the min red zone at idle when the oil is up to 80C.
When the oil reaches 100c it is at nearly 0 to 0.5 bar at idle and about 3 bars at anything above 3500rpm.
The oil is 5w40 and the car has an apollo tank.
Is this normal??

If you still have the original sender unit, I would replace that first. They are notoriously unreliable. I have had three on my K series in 10 years. Alternatively, fit a mechanical gauge. There are numerous companies who provide the complete kit. That will be my next move when my present one starts miss reading.

Sounds similar to mine (1.6K with Apollo tank).
I have a digital gauge and with hot oil at idle it flashes the pressure warning light (can’t remember the pressure but pretty sure it’s under 1 bar). A little blip of the throttle and oil pressure should jump back up.
You might also notice oil pressure drops on track during long right hand corners. This is also normal and where the Apollo tank is supplying oil to the engine.
