Another vote for Gears as the main one, also the spec ops on MW2 they are fantastic. Can't think of any other good shooters that are Splitscreen.

Already said, but Left For Dead 2 is good for this.

Not sure if you can do split screen with it but, Tom Clancy's rainbow six 2 wasn't a bad game and I can bet it'll be picked up for pennies these days.
I enjoyed playing co-op online with a friend and it gets terribly moreish not wanting to stop after completing levels!


Also the left for dead games are pretty fun too!
