You may need to provide more information as no one will have any idea how you're trying to connect, or the status of the console.
Not sure where the laptop comes into it, unless its splitting a mobile connection to the console. A few bits of additional information would be helpful so we can find out what is causing the problem.

Okay,
Console is an old 20GB model
Laptop is a Windows 7 HP G62
Modem is a 3 Mifi one
The only way I can see of connecting is through ethernet cable, so when I plug that into the laptop and xBox.. I'm trying to share the internet connection from the laptop, But it just won't work (I'v followed the Microsoft guide and various other ones, but still don't make a difference)

You need a router. You can get one for £20. If you really do only have a modem it'll only give out 1 IP address. I take it it works if you plug the xbox directly into the modem and turn the modem off and back on?
A router has a nice thing called a DCHP server that can give out as many IPs as you'll need to all your clients - xbox, laptop, NAS whatever.

If your using wirless on the xbox to connect to the mifi make sure that UPnP is enabled on the mifi.
Goto the mifi setting page enter the mifi password Admin click on the Security link bottom left, click on the UPNP Setting icon, enable upnp button save changes & reboot mifi, then run network setup on xbox360. Actually having upup enabled should also help with connection with network cable.

Ah sounds like you have the white xbox, still enable the upnp on the mifi, if your laptop connect via mifi, enter 192.168.1.1 in the browser url bar that will allow you to enable upnp as said previously.
You do not need a crossover cable any standard cat 3/4/ or 5 cable will do.
Using a network cable nn your laptop you will have to bridge the network connections of the laptop & mifi, this is usually done by highlighting both connections at the same time & using the Ctrl key on keyboard & clicking both connections then left or right mouse click (can't remember)& select bridge connections, obviously for this method to work you will also have to have your PC/Laptop on when going on xbox live.

Were you able to create a bridge? if yes, switch off laptop mifi& xbox, start mifi then laptop then xbox...
or make sure "enable dhcp" on the xbox in network settings is set.
or set it as static ip.
ie on the xbox network settings manually set it to 1921.168.1.50 subnet mask 255.255.255.0 gateway 192 168.1.1 then save...
On laptop see if you can connect or see 192.168.1.50 ie the xbox address (this is for manual only on these settings) ie ping 192.168.1.50 from cmd prompt..
