Does anyone play this much?
Im sorely tempted to get into it more after looking at some (OK, a lot of!) YouTube videos. Looks great,especially in VR.
Tempted by the Gulf map & most of the planes(except maybe the F-5 & Mig 21) but it also seems insanely complex, especially for the newer planes like AV-8 & F-18..more buttons than keyboard shortcuts.
So is it as deep as it seems,will I need to spend 3 years learning stuff? Best planes to buy? Best place to fly online? Anything else you can think of/any other comments?

In a word, yes.
There is an arcade control system but even that is complex.
Takes about 5 - 10 minutes just to start up the A10, even more so if you use the nav system and the weapons systems are incredibly complex.
It is good fun though, obviously the piston stuff is easier to fire up but harder to fly.
VR is excellent, although you really need to be running a good card to get it running at an acceptable FPS.
The standard version on Steam is free so you can try it out as everything is a paid for addition but incredibly high quality.
