Most PC sims nowadays use a very similar ring. Virtually the same track is available as an unofficial download for GTL, GTR and RFactor. I think it may be based on the original GPL track map actually, although obviously it's the modern Nordschleife. Having driven both, this commonly used version is a very good likeness, although certain bits are different (for example the fast right hand kink at the end of the fast section between Berwerk and the Karousell, two corners before the Karousell, is too tight on the sims). What matters though is having done hundreds of sim laps around the track when it came to my my first real life visit I knew all the corners and was able to drive at a reasonable pace with everything seeming completely familiar.
I think GTR Evo has an official version of the ring though, so Slipstream is quite right about that.
To learn the track for real life I'd recommend playing a sim as much as possible and watching some recent in-car video laps.
