theory is same as how you would drift in a real car; there numerous ways of provoking a slide depending on car configuration.
you could try, for example, a gallardo or an R8 to start with. Drive as you would normally i.e. on the racing line, aiming for the apex. Brake, and then turn in on the handbrake, aiming for the apex. As the rear slips, steer into the slide and modulate your drift angle with the throttle.
Slightly more complex, but then move onto a rwd car. Try something like a bmw or a 350z as these are quite nicely balanced. Again, racing line, brake, turn into the apex, and break traction as you turn in by dropping a cog, adding enough dose of power to get the rears spinning slightly ahead of road speed. Again, you then need to turn into the slide, and modulate the throttle.
That is the basic theory, but im sure someone can explain much better than i! ive no idea about tuning a car to better your drifting, but tweaking anything from the lsd, stiffening the rear anti roll bar, or even increasing tyre pressures can help.
Probably the beat tip i can give you is to maintain the racing line and clipping points, as this will maximise the width of the track in which you have to catch the drift.
