sim = simulation = trying to be realistic almost to the point of tediousness.
arcade = physics designed by 10 year olds.
Sims are good if you like the realism, or rather dislike games which makes the impossible in real life, possible and thus by virtue wholly unrealistic. Some arcade games are fun, like PGR4. Some are toss, like GRID.
If you want something a little more realistic, and probably widely accepted to be the best xbox 360 driving game, buy forza 3.
Personally I prefer the pick up and have a quick blast type approach, and get bored of games like Forza too quickly, thus find the crap-physics-in-comparison-but-enjoyable-aside-of-the-stupid-bikes PGR4 more entertaining, but Forza is probably what you're looking for.
