IMO the original GT was the best, it was the first time you could choose from loads of fast 'normal cars' in a game, MkIII Supra -> Celica GT4 -> TVR Grifith -> NSX, and drive them around some truely fantastic tracks (Apricot Hill, Grand Valley, Trail Mountain to name but 3), then you'd buy another version of your favorite cars so you could add the racing modifications without loosing the normal version 
IIRC GT2 just added more tracks (of which Seattle being the best), more cars with extra shinyness and theat lost their shinyness as you drove them, and a car wash.
While GT3 was also very good, by that time you'd got used to having all the cars from GT2 so was a bit of a backwards step.
GT4 was just full of promise and never truely delivered, more a jack of all trades and master of none
Although the 'ring was excellent.

And then if you went in to the car settings for your stock one all the aftermarket parts were there still so you could add them on. Also if you sold the car and then bought another one the parts would still be there.
For me GT was the best, it was the first of its kind and really wowed me with its graphics and the depth of gameplay with the license tests, the number of cars and tracks and being able to modify the cars.
GT2 still impressed as it had even more cars and tracks but to me the graphics were not as good.
GT3...oh they left the license tests in
but it got a wet weather track and it was good to see the game with graphics that matched the reputation for realism.GT4...again with the license tests?!?! It was fun the first time, novel the 2nd time and tedious by the 3rd game! And after all that development time and waiting for it to come out we still only get 1 wet weather track and 6 cars on track. I liked the 'Ring but not much else about it.
Did anyone else manage to drive the really really old cars on GT4? I won a couple but could never get them to actually move?!
