What difference does the different "Classes" make?

I'm looking for a new memory card, I've had various failures and need something reliable - however, I'm a little confused by the Classes of them - do they make that much of a difference?

The class determines the minimum write speed of the memory card.

If you have a DSLR or want to shoot high def video, you want to go as fast as you can afford. Class 10 cards are pretty cheap now.

Amazon's prices fluctuate quite a lot depending on supply, demand and other market prices, quite normal for it to move around

Especially flash memory as prices are very volatile.
