Better all-round camera - Canon 70D or 6D?

Apologies if this has already been done..
I currently have a 500D and as photography is only a hobby i try my hand a most things (with varying degrees of success) Motorsport/Landscape/Star Photography/Travel/Macro/even took to an air show the once (in no particular order btw).. but feel like i'm out growing the 500D (and my bloody MacBook Pro Retina is probably making me too damn fussy about image quality!)
Most of my current lens would work with the full-frame (120-400mm/Nifty 50) with the exception of my standard zoom (currently 17-55mm ef-s) so I'm thinking of trading both in (500d and 17-55mm) and getting the 6D/EF 24-105mm f4 L IS USM Kit but not sure if ill miss the 'reach' of my Crop Sensor but this would b be offset against better abilities in low light, better quality for landscape type pictures and better control of bokeh (when wanted)..
I guess the questions are
- Will an image taken on the 6D then cropped in post be similar/better to the equivalent taken on my crop sensor 500D ?
- or is the 70D such a step ahead of my 500D that i should go with that and keep my 17-55mm walkabout?
I realise its a bit of a 'it depends' question but interested in everyones opinions of which one they'd buy for general use before I go to a shop this weekend..

I went from a 60D to a 6D recently-ish and I reckon it was a pretty good upgrade for me - generally you will get sharper 'better' images and much better low iso. However - if you shoot a lot at longer focal lengths you will miss the extra reach. I believe cropping down will not give as good an image compared to an equivalent on a crop sensor camera (don't understand why though!).
So it's a tricky one - it will help your landscapes/star/travel/macro but hurt a bit for motorsport I guess. There's no bad decision really so maybe think about it in terms of what lenses you would need ?
