Bullet camera from HERE
The quality is excellent, some vids using the bullet on my profile page.
Camera supports from HERE
Can attach the bullet to the SM2 for externally pictures. Roof cam and wheel cam on my vids, used the bullet with the SM2.
As Daz says, get a Camera with AV in and image stabaliser.
I found the SONY DCR-HC30 fits the bill. Very happy with it. Cheapest place was Amazon

I run a canon MV650i digital video camera which has av in mated to an rf concepts bullet camera.

For reference, a Sony DCR100 with an RF Concepts bullet cam produced this (warning 26MB file, best to right-click and save locally before viewing):

This is optimised for the web - the original AVI has bigger and better definition - but even so I expect it's good enough for most people.
I don't know if this camera has image stabilisation or not (I borrowed the whole kit off a friend). If the camera is securely mounted I don't know that it's really necessary.

Image stabilisation doesn't work through the AV input, only through the onboard lens.
But you don't need it with a bullet cam, just a half decent mount.
This potentially reduces the cost of your set up. I believe mini-DV cameras with AV in start at about 3-400 quid. Ones with IS tend to be more pricey.

It needs to have AV IN - that's a yellow hole on the camera... but even then that 'could' be just AV out. If your manual says you can record onto the camcorder from a TV or VCR via the AV socket... it will support a bullet cam. (Make sure also that both bulet cam you buy and your camera are PAL not NTSC)
The thing to do is phone up RF Concepts (who supply the bullet cam) - as memory serves they have a list of cameras that will work.

Don't think I have one of those but I'll check later, cheers. I guess that's the only real way to get a decent picture when filming inside the car?
No... you can get great pics from inside the car with any cam... you need the right mount though (see Shady Tree's link above) - bullet just lets you get 'outside and dirty' - but you can get pretty bloody dirty without a bullet:
Here is a 4 mb WMV (from a regular cam lens) following my 'old' M3 round Donington... in the VERY wet - (hats off to Rob Grigsby for keeping his Seven on the grey stuff - he's such a hero)
