Canon 1Ds mk11 - Black and White

Looking to do a shoot all as B&W on a Canon 1Ds mk11 but can't find a setting to shoot in a B&W mode... Is there a setting ?

Or do you have to shoot in rgb raw and convert in Photoshop? If so what is the best method ? Convert to greyscale to convert, adjust corrections and then what.. Leave as greyscale or convert the greyscale to cmyk even thought there is no colour? I want the images ready to go to press in the right format..
