5 days, 880km off-road biking with helmet cam- advice needed

How to tackle this I wonder? I have only just received my SJ4000 so zero familiarisation time. I plan to mount it on my helmet and capture some video footage and stills for keepsake purposes. I currently have three spare batteries, a 32gb card and a 16gb card, plus mounting hardware.
I suppose my question is, to those who have experience with these cameras- how would you do it? I mean, what more for shooting video, what frame rate, how much can I fit on my cards etc etc?
