Capture One trial issues.

I've some issues with a 30 day trial of Capture One 8 that maybe someone could help me with, 
1, When exporting an edited picture to the session output folder it seems to create its own folder at random and won't send it to the selected output folder.
2, It won't copy the watermark I've created, even though it shows on the preview, though it did when I first started using it.
3, I have to reset the Toolbar every time I open a session.
On the plus side, comparing images back to back with Lightroom, I prefer the images from Capture One.
Could be that I'm just monumentally thick and missing the bleeding obvious,

Have you got multiple process recipes active?
Are you using Process or Export as the starting point?
3. Which toolbar? What are you resetting?
You have options to create multiple Workspaces to suit different aspects of your workflow should you require to do so. There are several options included in the default set.
If you change something in a Workspace and want to keep the new configuration just save it as a new workspace. Next time you open C1 it should default to the last workspace you used.
Once a Workspace is defined you can change to it and from it immediately by selecting a different Workspace from the list available via the "Window" menu.
1 & 2, It seems to make no difference what I do and I just seem to be going round in circles trying to sort it out.

You can also see the watermark on the main image and then not showing on all the previews, only the one selected, it should be on all of them and it still won't export any image with a watermark.
It could be that I'm using a trial version, but I'm reluctant to buy the full version with the trouble I'm having.

Let's start with 3.
The Trial is a fully functional installation. Nothing missing except the licence key.
I think you may be running the "Simplified" Workspace. "Default" should give you more Icons but may reset some of your other revisions - the browser location for example.
Get things set up as you would like for the particular task (you can have multiple workspaces tuned to different needs if you wish) and then go to Window>Workspace> Save Workspace and follow the prompts to save your own preferences with your own selection of features, functions and tool tabs that you you like to have grouped together. You can also add and delete tool from the tool tabs and set up your own tab with your most used tools, etc.
It is extremely configurable but that may not be something one can appreciate right at the start - you may need first to understand what you want to use before you can configure things to your liking.

Can you open the Process menu (Gear wheel as you probably know already), expand all the sub tools and post a screen copy?
There's a lot that can go on in there and rather than make any attempt to cover it all it would be easier to discuss what you already have.
There is somewhere a video that goes through all of this as best it can but obviously it's somewhat generic.
I use Windows. There may be some processing differences to Mac - they are not entirely interchangeable in some things - but basically if I open a recipe, keep it active (Highlight that recipe) and tick it to select it than add a Watermark it will show in the main viewer AND the browser thumbnail for that image straight away.
Capture One will then reprocess the previews for all selected images (in the browser) and re-display those with the Watermark for the ACTIVE (Orange Highlight) recipe. If you have a lot of images and not too much resource that may take some time and small Watermarks may not be terribly visible depending on the display size of your thumbnails. They should appear on the outputs BUT a simple output run can output multiple recipes with different settings and to different loacations.
Which brings us to your problem with the output location.
There are a couple of really useful features that can cause some confusion at first use. Again, somewhere there is a video that covers this and it may be useful to view that as a starting point rather than read my waffle. I'll look it up and post again.

My version of C1 is much older but perhaps, grasping at straws, you need to select all the thumbnails (Ctrl/A) and choose 'Apply to all' for the watermark?
Different session, but no other changes and the watermark is shown in all the thumbnails as it has done from the start,

Bear in mind that the concept is to allow the creation of multiple recipes for different purposes but to make it relatively easy to override them when required without having to redefine everything once again.
Your second session screen shot is working as I would expect it to in terms of the Watermark.
As a test try forcing the regeneration of the preview files. (From the drop down File menu). If that does nothing run the "Verify Session" option. Sessions should be very reliable and consistent - I have had one odd anomaly in about 5 years of use - but you never know what may happen and I can only really vouch for Windows 7.
ETA: Forgot to mention that when you look at the fields for the Output folders if you click on the little white arrow to the right you will be able to go to where it is currently about to create your files.
