Why do so many of them have a sign saying "no stillettos to be worn on deck"

Indeed. The fit and finish on a £3million Sunseeker has to be seen to be believed. It's SHITE!!!

Really really shocking to be honest...

I cancelled my order...

I worked on a similar brand as a summer job. I had to bring my own spurs

If however you are going to soend that sort of money, it is definately worth paying for a few hours of time of a YBDSA yacht surveyor (not designer, someone who has actually built boats for a living). These guys can put together a snagging list and most importantly get the job done properly.
