Nikon D5600 v Cannon EOS M5 v Fuji XT20

I'm replacing my 10 year old Nikon D80.
As I've got older, I've been doing less "serious" photography and I'm less keen on a bukly camera. The mirrorless brigade wasn't really around when I last bought a camera and despite some research, I'm feling very out of touch. I tend to use my cameras now for potraits (new kid on the way, so I expect I will be doing a bit of this), car trips (so landscapes combines with "arty" car shots).
I've visited a couple of the better London photoshops and it would appear that broadly speaking, for what I do my choice is:

It's coming down to one DSLR which would be a like for like replacement for my D80 and two mirrorless cameras. I have the Nikon lenses for the D5600 already, so that is a plus to going for a DSLR again.
I would be very grateful for some user experiences from people who have moved from an older DSLR to a mirrorless camera. I'm quite keen on using the camera on a tripod with an app on my phone.
I appreciate that I'm not asking specific questions, but it would be great to get a "brain dump" for fellow PHers.
I just want to get as much "real world" information as possible.
There is so much details out there, but it's hard to actually tell how this would actually matter to me as a mostly unadventurous photographer.

I switched from Canon (6D and 100D) to Fuji XT-1 a while back and I must say I have never looked back - the Fuji system is a pleasure to use and the lens range is great also. You get a nice jpeg and also a very adjustable RAW file.
The XT20 has got all the good bits of the XT-2 (successor to the XT-1) and I maybe be having one myself at some point!

I went Canon 40D to Fuji X100, then added an X-E1, and then an X-E2, and then an X-T1, bought a Canon 6D, sold Canon 6D, traded X-T1 against X-T2, sold X-E1, so now have X100, X-E2 and X-T2
The X-T2 is a fantastic camera, and as long as the feature set you want is available on the X-T20, you will have a tool capable of taking great pictures. As Mike says the Fuji lens range is fantastic (Canon are really lacking in dedicated M series lenses, and with the adpater you will end up with big heavy glass)
