Many of us use a decent quality DV cam with analogue in and connect a bullet cam. The tricky bit is getting the engine noise at the right volume (as many of the mics that come with bullet cams are too sensitive for loud cars).
www.rfconcepts.co.uk sell a good range of bullets - hi res Sony at about £140 with a 'standard' lens is good - unless you and a narrower lens for more track orientated work.
A short track vid from my Seven here:

A compo of mine here: www.stevecarter.com/highlands2.wmv
(both with the std lens)
(Quality from the camera / bullet is very good - but crap on here obviously)
