p/shop - GIMP question ...
Discussion
I would guess make a mask of the flower carefully using selections, duplicate a black and white layer over the top and use the ask to allow the colour version to show through.
Or skip the masking stage and just use the eraser to allow bits of colour to show through. With that kind of photo you could use another layer with a guassian blur on it and blur certain parts of the image.
Again, this is the kind of stuff Photoshop is used for professionally. I only ever used Gimp a few years ago and couldnt get on with it.
Either way the skill to doing it will be your use of varying thicknesses of brushes and patience in picking the bits out as it is a very intricate shape.

pretty straight forward to do in photoshop. Search google for selective color tutorials. This one looks pretty accurate

Two ways I can see to do it in Gimp
1. Create a mask over the top and desaturate to B&W, then using a soft edged brush clear away the area over the flower to allow the colour image to be seen. Then merge down layers.
Potentially take a while....
2. make a selection of the flower and whatever else you want in colour, copy to another higher layer, then desaturate lower layer to B&W leaving flower in colour on top. Merge down layers.
I'm no master at it, and have just started to read a good book on Gimp "Beginning GIMP" by Akkana Peck. I will read this then be a balck belt master !!!
I would guess Photoshop works in pretty much the same way (but costs more).

4 minutes in photoshop

Duplicate layer - Desaturate duplicate layer - erase all the flower from the b&w layer. I did use a wacom which speeded things up slightly..
Wow thanks 4hero - that is excellent.
