Hi

Broken throttle cables seem fairly abundunt for the S. I have noticed a lack of throttle stop on mine (for the pedal that is), if you push hard on the throttle pedal, all the way, you can brake the throttle cable whenever you like! Surely this is the problem? Or is mine missing?

A design failure,if i recall correctly there is a piece about throttle cables in the "bible"

If the throttle pedal is adjusted too high, or the cable is not aligned properly where it comes through the bulkhead, it will eat throttle cables. With these things set correctly it is better but you're right, it ought to have a throttle stop. I made my own using bits from a local DIY shop. It shortened the throttle travel by about an inch, that's how much I had been stretching cable!

It is a feature. An emergency slow down for those inflicted with a heavy foot.

Quite a bit about it in the bible. As Pete has suggested a stop is a good idea. I have them on the 520 for the clutch and throttle: simple small block of wood attached to the back of the pedal so that it hits the bulkhead and stops any further movement.
