That's a good question. The standard brakes on the V8S (and S4 I believe) are 240mm front and 253mm rear discs, the same as the early Griffs and Chims. The later Griffs and Chims had 260mm front and 273mm rear discs. So, assuming TVR knew what they were doing (?!) that's your answer. However, I have read some on here say that this combination is over-biased to the rear, thus justifying the use of even larger front discs/calipers. 260 x 24 front - which rears provide the best balance?
If you are converting from drums to discs, you may need to fit the appropriate rear brake limiting/proportioning valve (or whatever you want to call it) as well to achieve correct balance - I don't know if they are different.
For what it's worth, I upgraded to 260mm front discs first, and I thought this made the brakes too front-heavy on the limit, so then I upgraded the rears to 273mm and I think that has restored a better balance.

@TGTVR - Don't forget that I still have a set of rear disks (253mm iirc), hubs and calipers in the garage. You're welcome to take them and try them if you want and if you need bigger then just drop them back. Have a spare Sierra handbrake cable as well that can be customised to fit.

Assuming that it all bolts in then just flexible lines to the calipers. The spare handbrake cable will need shortening and eyelet ends fitted (someone on here got some from a friendly car breakdown man in the past) or else get a ready made cable.
