If they are standard fit onto all them Sierras, then they should fit straight on to the S.

In principle, grooved disks should be better than standard ones - better heat dissipation and les glazing of pads. In practice a lot depends on the type of pads fitted too.

I have been looking at getting new pads & discs anytime now, not really tried to find part numbers etc yet but just called ford parts to see how much original replacements would be.......

are you sure that aint £45 a set..... I had mine replaced by Austec at £49.50 for parts only (ie the both fronts) +vat

I used to buy the standard fronts for about £14 quid a corner, from what I remember the non-vented rear discs were actually more expensive. The only reason I can see to pay more is if you are suffering from overheating and need grooved discs to address this. For normal road use, there's no point going grooved. Plain pads work better (more friction area), and produce less pad wear and less brake dust. (I haven't mentioned drilled discs, because you don't want to go anywhere near them under any circumstances. Just don't.)
