Place to stay - Inverness to Ullapool?

We're off up north in August for a few days and trying to figure out a place to stay that is in a decent area in terms of getting to where we want to go and some evening entertainment in the sense of a decent hotel bar that does music (we have an 8 month old who goes to bed around 7-8 in the evening so we want to be able to have a pint and some music but still be in range of the monitor in case he wakes up and start screaming the place down).
I need to have a day in Inverness to see family and friends and I fancy a day up by Ullapool/Lochinver if the weather is nice. I also fancy doing an early morning run to Applecross to do the ring before the tourist crowds get on the single track roads.
Somewhere like Strathpeffer would be perfect as it's fairly central to all the places we want to go but The Ceilidh Bar in Ullapool would probably be the right atmosphere I think.
Any suggestions for anything that fits the bill?

TBH I would stay in Ullapool, the road to Inverness is a great drive and provided you don't have to be there very early it would be a nice day trip. Ullapool is surrounded by amazing rods and scenery that would be right on your doorstep.
The road North up to Kylesku bridge is well worth the trip.

Bright move.Torridon Hotel or Inn (big price difference!)... We have music in the Inn on most Saturdays, and it's only a stones throw from the rooms. You'd be in the right place for an early Applecross.
