Traditional pubs in Edinburgh

Could do with finding a few that aren't too far from the centre. Went to the "Malt Shovel" recently on Cockburn street which was nice but went on a weekday and seemed to lack atmosphere.
Open fires and comfy sofas are really the aim and a few decent ales.
Just missing some oldy-wordly pubs from back in Norfolk I think (landlord with a straw hat, no front teeth and webbed fingers is the norm
)
Not looking for spit n sawdust just a nice traditional pub with a good atmosphere for a few early evening/saturday day time pints.

Well another snow day for me meant I was in town and stopped off for a cheeky pint in the Guildford arms which I believe is the abbotsfords sister pub, overall I was quite impressed. Only had time to sample 1 of the 9 ales they had on offer but it was very good, (St Magnus, 5.2%) even if it was a bit steep at £3.50.
Will definitely try the pubs in the Rose street area, Abbotsford and Milnes. To skint for this weekend but next Fri/Sat I'll be seeing what Rose street has to offer
