Edinburgh break between christmas and New Year

It's my wife's 30th on Christmas eve next year and whilst she'd love to go to New York to celebrate, budget constraints mean she's going to have to put up with Edinburgh! I thought it would be a nice place to be from the day after Boxing Day until the 3rd or 4th of January.
So what I'm after is some advice on where to stay, which parts of the city are lively around that time of year etc.
I dont mind pushing the boat out on a nice hotel so something with a pool, king size beds, gym and decent restaurant would be nice.
Can any fellow PH'ers give me some advice?

The best areas at this time of year are the usual areas. The grassmarket,cowgate,royal mile, rose street, george street and at Hogmanay you will need tickets for the street party. Think they are £5 each for general admission.

The 'Caley' is OK but the New Balmoral at the other end of Princes Street is better. From either most of the good pubs and restaurants are within walking distance and the others are a short taxi ride away. You have the ice rink in Princes Street Gardens along with the big wheel and the 'German market' beside it and loads more. Enjoy!
