As part of my wedge 'knowledge improvement' process can you guys tell me how often I should grease the UJ's on the car? And what grease is best? And how much do you put in?

St least annually: general purpose bearing grease is fine: stop once it's oozing past the bearing seals biggrin

I use the black moly stuff, it seems to work well. And every 6 months. While it's jacked up you can adjust the handbrake too.

Usually 1/4" 28tpi taper fit they sorta self tap on the way in.
Buy a small box of mixed angles, that way you can use the most suitable ones for the inner UJs.

any help?

think you'll need the longer ones, or try taking them out, pump some grease through (this should clear any dried grease/crap blocking them)and replace
