I discovered tonight my dashboard lights seem to have three settings with the dimming control: on, off and off

It isn't particulary important, but has anyone any idea why the dim setting wouldn't work?

The dimming is done via a length of resistance wire in series with the feed to the dash lights. On my car (early Tasmin FHC) this was located right at the switch, and was so corroded that it had two off and one on position.

I really must have a look for some of these fancy switches, and lights, etc.

I don't normally go out in the DARK.
