Taking Its Temperature

My gauge is starting to read hot again. I suspect it or the sender is at fault.
Where is the best place to check the temperature remotely?
Using my nifty infrared, laser guided, digital thermometer I get readings of 80-83C around the cooling system (80 at the block/hose fitting and swan neck and 83 at the radiator) and the same at the metal fittings on the oil cooler hoses. The rest of the readings are all over the place but logically so (cooler on top and hotter closer to the exhaust manifolds).
Is the external cooling system the best place to check or am I missing something?
