I have a 1984 350 in white, but where do I find out what breed of white paint to buy for a few small touch up jobs? An aerosol will probably do but no idea which one.

If the colour is original, you can find out from your "body code".
If you look at the vin plate on the near side front wing under the bonnet, one of the sections is "Body code". This is your paint code.

Failing that, most decent paint shops will match the colour up for you.

If you are able to remove to the filler cap a decent paint supplier will be able to make a match. If you are not far from Harlow then Leonard Brooks is your place, they will also put your match into an aerosol. You might might be able to do it all by post which I suggest you use priority service which can be insured against loss or damage.

White is a easy colour to work with if you are not far from Enfield I'll give you a hand.
