I can see the fuel pressure vary according to the throttle/plenum vacuum as it affects the regulator - so I think it works. I am careful never to run out of fuel so I have never seen it read zero under running conditions - but it is a useful diagnostic check on fuel flow/pressure.

You would need to fit a sender to convert to the electrics sensor that the oil pressure guage uses.
I just have another guage (mechanical) attached to the cold start injector that monitors the fuel pressure guage, and this in theory could be brought in to the dash area, but I leave mine in the engine bay, so that if I get any probs I can instantly check fuel pressure and rule that out. At one point I also had a mechanical oil pressure guage T'd into the system doing the same thing (a Tims guage), but removed as now oil pressure guage is working correctly in car (twas a bad connection on the sender causing all sorts of havoc)

Yes, it will work. Great idea. All of the vendors I researched for my fuel flow issue used the same sensor for fuel and oil. With both sensors being made by VDO, a switch would work well to select the desired reading. The sensor is only a variable resistor, feeding into the gauge. There's no way to blow out the gauge. As long as the pressure doesn't exceed the rating of the sensor, it will be fine too.
