Can someone explain the benefits of a trigger wheel?

It's a reference point for a fully mapped ignition system like Emerald or DTA.

After the gap in the teeth - it then counts the teeth until it senses the gap again.

To expand on Rev's note, the trigger wheel has a tooth every 10 degrees or so.

This means that the ECU knows where the engine is much more accurately than, for example, using the ignition amp, which is every 90 degrees.

While the ECU can interpolate between these points, if the engine is accelerating or decelerating, the interpolation is prone to error, end the finer resolution of the trigger wheel minimises the error.

You can run mapped ignition on carb engines .. in fact the very poor fuelling offered by most carbs means that you'll see good driveability improvements if you can map the ignition properly, the best thing though is to junk the carbs and go full management unless there's a reason you have to keep the carbs eg the rules in a historic race series demands it etc.
