Head change on a Cologne is easy enough; it's all old-school iron and steel... I'm not even sure if there was any difference between the 2.3 and 2.8 versions (bores maybe?) - but it'd be as well to make sure any replacement is definitely from a 2.8i to be on the safe side.
Better still, see if you can get post-1985 heads because they're unleaded-ready, the earlier ones aren't...

Agree with what zig said about the manual, you could also use the Granada 2.8 manual, covers everything. Be aware you will need a torque wrench that goes DOWN to a very low setting for the inlet manifold and rocker covers.

As Wedg1e said, stick with 2.8 parts only, the 2.3 had smaller bores, smaller valves...... so not really interchangeable.

The post 85 heads although FMC said were suitable for unleaded they didn't have hard exhaust valve seats, they chilled the iron during casting at these points to make the iron harder, my advice would not to get too hung up about looking for later heads and just get seats fitted, it's not inexpensive, but once its done it's done.

The radiator..... I looked for a replacement rad and never found one the same, I found similar but things like the overflow pipe was in the wrong position. From memory the nearest I found was 3.0 capri, the 2.8 capri rad is much narrower. As already said probably your cheapest and easiest option is a recore.
