Changing a heat sensor

Hi,

My puma will not get up to temp on the gauge. Already changed the HCV and the thremostat but it still doesn't get hot according to the gauge. It runs fine, fuel economy is excellent so I think it might be the sensor that tell the gauge how hot the engine is, rather than the one that tells the engine how hot it is.

I've been told it's easy to change, but haven't been told how to do it.... any help chaps and chapesses?
