Roverguage temperature readings - any issues?

alright guys,
have been having a few cooling issues on the odd weekends of use. Having owned the car for 6 years and never had a problem i was a little concerned! High running temps, jumping from 80 to 90+ in a minute of waiting in traffic or so and running & 100 up to 110 once in traffic. GULP! Fans didn't seem to be able to keep it down at 90 no matter how long they were on.
After referring to the Bible I have topped up the system twice now (will try third time tomo) to ensure it is running at capacity. Method: undo swirl tank top, remove expansion tank cap, heater to hot, bleed radiator and top up swirl tank before replacing all caps. Run up the car, take it for a run to get everything moving and perform the acid test. On both top-ups so far the radiator seems to overflow immediately so suspect air lock and not enough coolant.
so today, running at idle with a few blips and continuous throttle openings until gauge 60, then out for a run about 70, left idling to see what would happen. Went just past 80, fans kicked in, return to 80. rose to indicated 87 fans in and didn't pass 90 once.
Out of curisoirty, i connected my Rovergauge software to see what the ECU is receiving as the temp reading and it was 10 degrees higher than my gauge reading (85 vs 95). I'm obtaining a infrared thermometer to validate the readings to understand the difference. My question is should i be worried by this? What reading would you trust noting i know my car's temp behaviour?
