Not a lot, if you're being pedantic. 'Coilover' is simply an abbreviation of 'Coil over damper assembly'; ie. the combination of a coil spring fitted coaxially over a damper.
Aftermarket suppliers just use the term 'cos it sounds sexier, though by general usage it tends to imply an uprated/adjustable combination of springs and dampers, these days (stiffened, adjustable damping or adjustable spring seats), simply because aftermarket suppliers use the term and OE manufacturers don't.
