Hi, I am looking at buying an E63 6-series but most are now approaching 10+ years old and the interior look bit manky.
What can one expect to achieve through paying a professional to detail the interior? could carpets be brought back to very good condition etc? getting steering wheel re-trimmed, replacing worn trim pieces is fine for me to do, but don't fancy ripping out interior carpets etc. I'd set aside £4-500 to bring the interior up to very good condition.
Example, could the carpets be brought back to the condition on the second image without ripping them out? leather can be made as-new I believe.

Steering wheel can be re-trimmed by Royal Steering Wheels. I was quoted £160 for black leather and stitching. I recently bought a kit from Furniture Clinic which did a pretty decent job. Just make sure you buy some of the satin finish and mix it in with the leather bonder. All in £40.
I found a local company who cleaned, primed and sprayed my worn cream leather seats for less than £200. Both front seats were done and the colour match is excellent.
Both of these simple and cheap fixes have really transformed the interior.
