There are a couple of good hotels in Melrose as mentioned. I don't know your budget but this is supposed to be good if you're looking for an upmarket evening.

Check out the Allanton Inn, in erm, Allanton!
It's nearby, lovely place, great food & people. They often have groups of car fans staying.

The museum is great, you'll enjoy it, and the roads around Duns are quiet and fun to drive, you can easily imagine the great man bombing around them in his Borders Reivers E Type or Elan. It's an hours drive away for me, so accommodation isn't an issue.
I was at the "new" museum about three weeks ago, it's really well done, all a couple of hours. The Lotus Cortina is interesting, now owned by Dario Francitti apparently. Go for ten o'clock, it's quiet then, there was a guy looking after the place knew a lot of the history and was able to guide me through the museum. Go also to Chirnside to see the clock and his grace. I was 14 when he died, he was a great hero of mine. Brilliant driver, down to earth county farmer.

Buccleuch Hotel in St Boswells is great. I have had lot's of good food there. If you want a change for food you can walk along the avenue of trees to Hunter's Stables,,a newish Italian which is also very good.
