My RAC membership is due for renewal in April where I have got 2 cars covered the daily driver Honda Accord and my Triumph Herald with at home cover for about 180 GBP

however the level of service by the RAC was terrible with very long waiting times (on average 3 hrs) when I needed them for the Honda, since then due to change in commute I have got rid of the Honda, but will be getting another car in summer for daily duties

What is the best option for me to cover both my classic and the future shed? stick with RAC or go to another provider and if so any idea of the costs?

Try Classicline for an insurance quote. Their policies include breakdown and recovery as standard.

As the previous commenter said, speak to your insurer or discuss it with other firms when renewing.

I got European cover included for a bargain price with my renewal from Admiral and it turns out it is actually from the AA, and looking at the AA's prices I'm paying about a third of their cheapest policy (admittedly my car isn't a classic but is old enough for some breakdown firms to avoid it).
