Make sure whatever you say is representative of YOU. So if you like activity hols, talk about what types of sports/activities you like. If you are a culture vulture, where have you been (galleries, museums, cities) and where would you love to go.
The panel just want to know about you, so the content is secondary. Know what you are going to say first - "Good Morning: My name is Hevanna, and these are the things I would plan for my dream holiday."
Know your exit line too, e.g. "So I know where I'd love to go, and some day soon I'll be there."

Don't forget to tell them how you would go about planning the itinerary for the perfect holiday! Just showing that you can dream about the venue isn't going to cut the ice. They will be looking to see if you understand the organisation/logistics that go into making it the perfect holiday - not just having one. You don't need to go into the details - tyou haven't got the time to do it anyway - but at least make a mental list of sources of information on travel, accommodation, restaurants and sight-seeing and how you would prioritize these sources according to budget.

Thank you all for your help I have just finished typing it up and if I say so myself it sounds quite good just got to rememer it now ha ha
Try your holiday from hell. Easier to talk about, funnier and I bet they'll remember you. I spent a night in a disused mortuary when I got stuck in NYC after Sept 11th attacks, with a 70 year old Palestinian illegal immigrant, a jewish family, a prostitute and her client, and a hunchbacked gay man who told whopping lies. Not funny at the time but now people klll themselves at the story.
